Waffled Mashed Potatoes

Serves two

waffled mashed potatoes

Saute the vegetables in the butter or oil until soft. Season as desired. Mix in the mashed potatoes.

Heat a non-stick waffle iron. When ready, brush the grids with butter and spread the potato mixture. Cook until golden brown, which may take more than one cycle. If you need to do two batches, keep the first batch warm in a 250°F oven, loosely covered with foil.
