Breakfast fried rice
This is not an Asian-style dish
- 4 breakfast sausage links
- 2 cups cooked rice
- 1 cup green onions, or more to taste
- 2 eggs
Cook the sausages in a non-stick pan until cooked. Remove from pan. If there is a lot of fat, remove some. If there is none, you will need to add some butter or oil. Put the cold rice into the pan. When hot, add the green onion. When the onion is cooked, put back the sausage, drop in the eggs, and cook, stirring, until the egg is fully cooked and dry. Serves 2 hungry people.
Variations
- Bacon - fry 4 strips of bacon cut into pieces until cooked as you like it. If there is too much grease in the pan, remove the extra before adding the rice.
- Ham - add 1/2 cup of ham cut into cubes. You will need to add 1 tablespoon of oil or butter to the pan.
- Cheese - add 1 cup shredded cheddar cheese at the last minute. Heat until melted, then serve.
- Vegan fried rice - Omit meat and eggs. Stir-fry 1 cup of tofu cubes or crumbles instead of the meat, then proceed with the rice and the green onions.
