I buy Bob's Red Mill brand. Sometimes I used to get a bulk brand at the local natural food store, but the pre-packaged stuff is safer for those of us who are gluten-free. I sift it to take out the coarser hull particles, which can be gritty. Although it only looks light tan in color (with black flecks), a 50% mix will cook up chocolatey brown.
